Brown the onions slowly in the lard, add the beef, turn up the heat and sautÄ quickly. Add the tomato sauce. Salt to taste, pepper generously, add the herbs and the crushed garlic. Cook over a low heat, 7 to 10 minutes. Add the sultanas. Pour into a gratin dish. Cover with the thick mashed potatoes to which you have added the butter, salt, pepper and nutmeg. Top with the grated GruyÅre mixed with the bread crumbs. Bake in a hot oven (400F). Gratin slowly so that the whole dish is boiling when served. Serve with a lettuce and garlic salad.
